  • 15 g light roast coffee (filter grind)

  • 240 g hot water

 


 

EQUIPMENT

 

 

  • Hasami Kalita dripper (101 or 102)

  • Paper filter

  • Kettle (gooseneck)

  • Scale and timer

  • Cup or carafe

METHOD

 

 

  1. Prepare Filter – Rinse the paper filter with hot water to remove paper flavor and warm the dripper.

  2. Add Coffee – Add 15 g of ground coffee and level the bed.

  3. First Pour (0:00–0:15) – Pour 90 g of water in circular motions over 15 seconds; allow to bloom.

  4. Agitate (0:15) – Gently swirl or stir the dripper to ensure even saturation.

  5. Second Pour (0:30–0:45) – Pour up to 180 g total in a slow, steady flow.

  6. Final Pour (1:15–1:25) – Finish with the remaining 60 g, reaching 240 g total.

  7. Drawdown (~3:00) – Let the brew finish naturally, without disturbing the bed.

  8. Serve & Swirl – Swirl gently before serving to integrate flavors.
